We cold-press the Assos olives that are harvested early and correctly, pass them through our filters, cut them off from oxygen and preserve them in our tanks and present them to your taste in our dark glass bottles. Our olive oil, which has a low acid content, is suitable for raw consumption with its high polyphenol values, sensory properties such as fruitiness, bitterness and tartness.
