This premium olive oil is a harmonious blend of indigenous Istrian olive varieties, including Buža, Istrian Bianchera, and Rosignola. Cultivated at altitudes between 80 and 180 meters above sea level, the olives are handpicked and processed within hours using a two-phase cold extraction method at temperatures not exceeding 24°C, preserving their full aroma and nutritional value.
Chiavalon Istra boasts an intense green color and a rich texture, with an aroma characterized by notes of green olive fruit, tomato leaves, basil, artichoke, dandelion, green grass, green peel, banana, and green apple. On the palate, it offers a prolonged piquancy balanced by a gentle bitterness that lingers pleasantly.
