Not a dream, therefore, but an idea that comes from the dedication to the land and the passion for extra virgin olive oil.
The La Crocetta company has been producing oil on its land in San Casciano dei Bagni for more than two hundred years. Nebbio represents the ambition to improve a product that is already born in an area of sure excellence: the severe environmental conditions of the high hills between the Val d'Orcia and the Val di Chiana, give Nebbio oil a complex of herbaceous scents which, in addition to delighting the palate with unprecedented sensations, are the magnificent symptom of the polyphenols present in the oil.

The 2018 vintage was a difficult year. At the end of February, a frost occurred which severely damaged the plants and caused a considerable reduction in the yield. Our 2018 extra virgin olive oil was still excellent, with an acidity even lower than that of last year (0.12 against 0.16 in 2017), a fruitiness that gives unmistakable herbaceous and vegetable aromas, an intense bitter and spicy, values due to a considerable polyphenol content.
A year marked by great drought. The scarcity of rainfall has compromised the harvest for about 30%, but, thanks to the drupes that have managed to reach maturity, it has also enhanced the herbaceous notes of our oil. The average yield was 12.59%, the acidity stood at 0.16. The harvest was carried out starting from the first days of October, a decision dictated by the need to pick the olives promptly, if not early, an indispensable choice for making a high quality extra virgin olive oil like ours. It is no coincidence that we obtained the highest rating in the context of our DOP Terre di Siena.
It was a rather unfortunate year due to a massive presence of oil fly. The countermeasures adopted were limited to a very early harvest and the renunciation, with the advance of the season, of the fruits coming from olive groves now compromised by the attack of the parasite. This allowed us, despite the smallness of the oil obtained, to still preserve the quality of the product: low acidity, well below the legal limits for the EVO classification, a satisfactory content of polyphenols, peroxides reduced to a minimum. However, our plants have not undergone any chemical treatment.
HOW WE WORK
By scrupulously following the protocols dictated by organic farming, our olive groves are not treated and are fertilized exclusively with manure from local cattle farms. This practice gives the plants a balance and stability that are a guarantee for the production of absolute quality.

We limit ourselves to following the cycles of nature with particular attention to the ripening of the olives that we tend to harvest with a certain advance in order to preserve all the polyphenolic charge and prevent the birth of dangerous fermentation processes. In this regard, our olives never stay more than five hours in the boxes
