The Olive Family
The surname Aceituno is synonymous with olive tree. It comes from the Egyptian "Zaitun" which means "wild olive tree", a surname that perfectly defines this family from Jaen with a marked olive tradition.
For decades, the Aceituno-García family has cared for the land with care to obtain the best fruit
. Several generations linked to the cultivation and tillage of the land, in a traditional way, as they were "mountain olive grove" farms where the main tool was the hand of man.
Four elements come together in the gestation of these fruits.
Grateful lands, rain-fed crops that year after year grow their harvests thanks to their green roofs that keep moisture and coolness in and nourish the plant in the hottest months.
Water , which without falling abundantly or torrentially, makes its presence in its proper measure in the mountains of the Sierra Sur, keeping the plant hydrated throughout the year without the need for irrigation, unlike other areas of the countryside.
Soft air , that rocks the plant, oxygenates it, refreshes it and gives it vitality, contributing to its growth. Surrounded by Mediterranean mountains and without any contamination due to the lack of industrial activity around them, the olive trees of the Sierra Sur dance to the sound of the gentle mountain breeze, showing the characteristic silver underside of the leaves of the picual variety, for which they receive the nickname of "snowy".
Fire, the sun of the summer months favors an ideal temperature at the time of flowering, accelerating the gestation of the fruit. It is an inland Mediterranean climate, but without excessively whipping the plant thanks to the freshness provided by its proximity to the mountains, which in turn allows for a green fruit to be available on dates when in most places is already ripe, and from which this EVOO is obtained, with an intense green color, which provides it with a high rate of chlorophyll and polyphenols that it contains, and especially standing out for its enormous content of alpha-tocopherol (vitamin E), which make ACEITUNO EVOO a fresh olive juice, with a balanced flavor in intensity and fruity aromas that evoke freshly cut grass, leaves,
The new generation
UNOACEIT was born from the need to continue the hard work throughout the history of our family in the cultivation of olive groves and the harvesting of olives, our symbol of identity.
For generations, these mountain lands were tilled by hand, plowed by yoke of beasts, dug with a hoe, fertilized with natural manure,... preparing their roofs, to obtain the best fruits from their olive trees, olives traditionally shaken with chestnut sticks, collected from the ground one by one in esparto baskets.
This concept of traditional olive grove was changing slightly, since the steep terrain does not allow greater mechanization, but always, the last phase of the process was missing, obtaining our own EVOO. This hard work was always lacking in continuity, since it ended after the harvest and transfer to the mill, where other hands were in charge of obtaining the product with the fruits of all the harvesters.
From that need, to complete the entire process, to see the fruit of so much dedication and work, to give a new generational change so that these lands remain in the hands of the family,OLIVE
our own oil, for which the land is prepared with care, those trees are selected that will provide the best fruits each campaign, depending on the weather, the land, the precise moment of harvest is chosen, with the right temperature, trying to that the fruit does not suffer any erosion and is transferred to the oil mill in hours, in the best conditions, for grinding at the moment, thus preserving all its properties intact. A new approach to maintaining the traditional olive grove, to obtain the best of it and make it reach exclusively, through a limited production, to the best tables in the world.

Olive “Green Lineage”
It's a extra virgin olive oil Premium category, cold extracted from our best olives of the picual variety, harvested early, just at the beginning of the veraison phase, when the olive is still green, before the fruit begins to color and is destroyed the chlorophyll. At this time, the olive has not yet accumulated much of its oil, its yields are very low, but this is of the highest quality with a very high content of alpha tocopherol, being an authentic olive juice, a highly healthy product, a natural antidote against cellular aging, due to its high content of Vitamin E and its antioxidant properties, its cardiovascular benefits, its anti-inflammatory power.
