Chiaroscuro, as its name suggests, is an oil that loves contrasts and strong flavors , even when used in the kitchen: know that dishes with a sweet tendency can very well tame its characteristic bitter note and counterbalance it. With its vegetal and spicy notes it can enrich a long series of appetizers. In particular we recommend it with bruschetta with salami . Why not combine it with salmon bruschetta or marinated tuna, or with sweet and tasty tomatoes . Chiaroscuro manages to give great character to meat carpaccio and legume soups (for example with sausages and beans ). Excellent with meats ( grilled ,
braised and stewed ) as it will harmonize and emphasize them: lamb and lamb, meat alla pizzaiola, lamb livers and onions and goulash . Fantastic with and Tex-Mex preparations such as Chilli con carne.
In the 1970’s, the late Dr. Donato de Robertis, respected cardiologist and family patriarch built his countryside dream villa just outside the medieval seaside town of Trani.
Surrounded by breathtaking views of vast olive orchards and recently retired, Dr. Robertis purchased the neighbouring properties and embarked on a mission to produce healthy, high-quality olive oil. As a cardiologist, Dr. Robertis understood the health benefits of extra virgin olive oil and sharing these benefits and his knowledge became his passion. After the passing of Dr. De Robertis , that same passion for producing the highest quality extra virgin olive oil was continued by his daughter Ottilia and son-in-law Paolo. For years, De Robertis olive oil was produced and sold locally. Following the passing of Dr. Robertis, Ottillia and Paolo decided to pay tribute to Ottilia’s father by branding this premium olive oil with the De Robertis family crest and sharing it with the world. We take great pride in producing this premium, single-estate extra virgin olive oil now enjoyed by aficionados and consumers alike, all around the globe.
After the passing of Dr. De Robertis , that same passion for producing the highest quality extra virgin olive oil was continued by his daughter Ottilia and son-in-law Paolo.
For years De Robertis olive oil was produced and sold only for local consumption. Ottilia and Paolo decided, in honor of Dr. Robertis, to brand and bottle their premium olive oil with the de Robertis family crest and introduce their family olive oil to a large market.
