Extra-Virgin Olive Oil
- Ranhados do Douro PORTUGAL. You have to come to Ranhados do Douro in the north of Portugal to draw the secrets of this very dark gold.
It is here that I select the best plots each year to develop an exceptional oil.
In the middle of vines, chestnut trees and almond trees, clinging to the mountain, the olive trees are mostly one hundred years old.
Here we are not talking about ORGANIC but wild olives in NATURAL CULTURE. Mechanization and limited interventions : Three plows per year, In spring, mid-summer and early fall a few weeks before harvest.
We only do one spring pruning every 5 years. We do not use any chemicals, only natural compost.
GRAND CRU OF OLIVE Produced from a family culture and harvest, the Grand Cru VALE DOURO olive of Dominique VIARD is one of the greatest European Grand Crus for its extra virgin purity, its pure taste "intense ripe fruit". Aromatic and fiery, the olives are harvested on the heights of the Upper Douro, exclusively by hand and only by 6 "old-timers" from the village of Ranhados de Meda. The oil is extracted only by mechanical processes. Its variety of olives is dominated by the Madural, a rare olive from northern Portugal. GREAT OLIVE VINTAGE Traditionally grown and harvested, the Grande Cuvée d'olive VALE DOURO of Dominique VIARD is emblematic for its pure "green fruity" taste. Ardent and aromatic, the olives are grown on the heights of the Upper Douro, an exceptional terroir. The harvest is carried out by a small group of villagers from the village of Souto, near Penedono. This oil is extracted only by mechanical processes. Its variety of olives is dominated by the Cobrançosa, a typical olive of northern Portugal.
