Paz has her certification in Train the Trainer from the Institute for Agricultural and Fisheries Research (IFAPA 2010), she is the owner of the Seville Oleoteca. She teaches and organizes tastings and courses for the School of Olive Oil (ESAO) and for her own tasting room. Yearly she coordinates olive oils for Andalucía Sabor trade fair and is a member of the jury of important international competitions.
