About Us

We are the Deša family agricultural estate, located in Zadar. With historical significance linked to the sacred culture, it is also a significant hub for agricultural production. A long tradition of food production in the Ravni Kotari area results in a richness of indigenous species of many types of fruits and vegetables. The guiding idea behind planting olive groves is sustainable coexistence with nature and ecologically sustainable production focused on native species.

Main Goal: To offer customers products of the highest quality.

We preserve biological diversity, encourage the development of natural enemies of pests because it is also the most cost-effective way of plant protection. An indigenous variety of oblica has been planted, which has proven, in our climatic conditions and geographical location, to be the most resistant to pests and disease.

The entire project is conceived according to the principles of ecologically self-sustainable production, primarily of indigenous products. A responsible attitude towards the land, plants, and animals results in top-quality products (olive oil). For us, olive oil is not just a product in which we aim to achieve top quality, but we also want to awaken awareness of its historically proven healing power. Food is medicine.

Indigenous Oblica Variety

For planting, exclusively the oblica or orkula on its own rootstock was used, as the variety most resistant to poor pedological and hydrological conditions (lots of stones, drought, etc.).

Organic Olive Farming

Use of only ecologically permissible means for protection and fertilization, with regular monitoring by the authorized control station (AgriBioCert).

The Microclimate of the Location Benefits Olive Growing

The olive grove is situated in an excellent location for olive cultivation, at an altitude of 100 meters. It is 8-9 km away from the sea. In this area, there are currents of warm sea air coming from the direction of the Nin Bay.

A Responsible Relationship with the Land, Plants, and Animals

We have introduced chickens into the olive grove so that their natural behaviors can protect and enrich the olives. The chickens scratch at the soil and eat insects, thereby reducing the number of potential pests and harmful bugs that could threaten the olive trees.

Ensuring Long-Term Preservation of Valuable Properties

During the processing, a mechanical method (pressing) is used in a cold environment (the maximum heating is up to 27 degrees Celsius).

Deša Organic Extra Virgin Olive Oil is a high-quality oil obtained directly from the fruit of the olive exclusively through mechanical processes.

The cold process involves filtering or centrifuging the olive paste obtained at processing temperatures below 27°C.

After processing, the oil is not additionally filtered, which gives it a characteristic flavor and the possibility of sediment formation.


Eggs from happy, free-range hens of various sizes and colors with a minimum net weight of 530 g, Class A.

The hens reside in an organic olive grove, housed in a movable chicken coop, and are moved to a new grazing area every 15 days.

Each hen has as much as 333 square meters of space, while Maremma sheepdogs protect them from predators.
