Organic, Biodynamic & Premium Extra Virgin Olive Oil. La Cultivada Quintaesencia follows on from our four monovarietals – it represents the purest, most delicious way of combing the three fundamental principles: the bitterness of the picual with the lively spiciness of the hojiblanca and the persistent, almondy fragrance of the arbequina. This is a blend that we produce after each year’s harvest and once our monovarietal oils have been selected, which we then combine with the precision and knowledge of an alchemist.
“Quintaesencia” (quintessence) is perfection itself, the elixir of life that exists to such a degree of such purity that it transforms everything into gold. In ancient times, alchemists used this word to refer to the soul or to aether.
ORGANOLEPTIC PROFILE
An oil of medium-high fruitiness with predominantly green overtones. Exceptionally fragrant, with herbaceous notes and very reminiscent of vegetables, along with aromas of green apple and wild flowers.
On the palate, a striking combination of leafy greens and green almond which persists in the aftertaste, together with a hint of bitterness and a progressively spicy finish.
An extremely well balanced, harmonious oil.
