The product and genuineness
The most cultivated variety of olives "Coratina", allows the production of an extra virgin olive oil with a pleasant taste of fresh, almond and slightly fruity olive. The olives are picked directly from the tree; this method of harvesting, certainly more tiring and longer, guarantees the selection of the best olives, which have reached the ideal stage of ripeness for the milling process. The selected olives are cold pressed during the day, continuously, thus not undergoing any heating. Our oil is offered in "filtered" and "whole mill" types. The first is clear, opacified by the microbodies of the olive tree present in suspension, the second. Both low in acidity. Unlike other fats, olive oil has a quantity of linoleic acid equal to that contained in breast milk.

Location and history
The traveler who enters the country of Bari encounters a unique spectacle in the world. For hundreds of kilometers, he will travel constantly immersed in stretches of olive trees as far as the eye can see.
OUR OIL IS BORN IN THE HEART OF THIS LAND.
The initiative of some local olive growers in 1958 constituted the ELAIOPOLIO COOPERATIVO. Today, the members of the Elaiopolio cultivate one of the oldest and most noble plantations in the land of Puglia.
There our Cooperative today reaches a social structure made up of about 700 olive grower members, on over 2,000 hectares of olive groves located in the countryside of Ruvo di Puglia. The predominant cultivar is the "coratina"; Elaiopolio has a daily processing capacity of olives of approximately 100,000 kg distributed among the three processing lines: conventional extra virgin (550,000 kg), organic extra virgin (15,000 kg) and DOP extra virgin (25,000 kg). The transformation processes follow the most advanced technical solutions for quality improvement. In addition, Elaiopolio guarantees to the contributing members constant assistance and training for the application in the field of the best production techniques, to guarantee a healthy and genuine product. The growing demand for high quality products has led Elaiopolio, since 1970, to sell its oil in packs. Our products have participated in various exhibitions and specialized competitions in the oil sector.
