If you ask Giovanni Donnini the reason for the "restless disease" that pervades him at each harvest and which culminates at the first taste of the new oil and then rekindles vigorously at the flowering of the next olive year, the answer will be only one and always the itself: The Passion!
Born in the countryside of the "Paiatici" family farm in the Municipality of Fiesole, from an early age he grew up in the privilege of an ancient world made of tradition and values, among centuries-old olive trees, and the daily commitment in the fields of the farmers including farmhouses, he spent whole days during the summer holidays.
And it is there, directly living the experiences and rural civilization of a world that has now disappeared, that he developed a strong passion for the olive tree even before that for oil; for this generous and vital plant capable of generating a fruit that has always represented for humanity, a meaning of absolute purity, from religious symbolism to various medicinal uses, from cosmetics to representing the central element of our diet, sublimated by today's Mediterranean diet.
And this is the reason for Giovanni Donnini's passion for enhancing his olives to create and market through the Matrix company a product of true excellence as evidenced by the numerous certificates received and the excellent results achieved over the years by participating in important international competitions.
The Matrix company was born from this passionate commitment, which since 2014 produces and markets its organic extra virgin olive oil in three different variations: from the historic award-winning "Essentia Gocce d'oro" IGP Toscano Colline di Firenze, the monocultivar from Frantoio "Vertigo" and the recent monocultivar of Moraiolo "Medusa"

History
The Matrix company was born from the constant commitment of Giovanni Donnini in creating a laboratory where to develop the enhancement of organic extra virgin olive oil, placing the utmost care and attention on production processes, respecting the tradition of Tuscan olive growing, making use of the best technologies.
This result is ensured by paying great attention to the cultivation, pruning and fertilization of the olive groves, as well as by the timely harvesting and pressing times contained in the same day, which are decisive in order to obtain a product of excellence. Bottling under an inert atmosphere in order to preserve the freshness and fragrance of the freshly pressed oil.
