HISTORY
Over 170 years of Tuscan quality and tradition
The origins
The story begins in 1846, when Cesare Diddi Mussi's ancestor, Antonio Morelli, bought the farm, describing it to his son Carlo as follows:
“… I bought for 100 scudi to be paid after one year n. 4 saccate in Montaleo. This can be considered the Eden of Casale. "
The adventure continues
After more than 160 years, in 2009, Cesare Diddi Mussi, just 19, after completing his high school studies, decides to continue the adventure of Podere Il Montaleo.
He moved to his family's country residence in Casale Marittimo, specializing in the production of extra virgin olive oil.
The new Frantoio
In 2019, a structure was inaugurated consisting of a state-of-the-art oil mill, a bottling line and storage rooms, offices and work shops. The entire production cycle, from the olive harvest to the packaging of the finished product, takes place within the company without the interference of third parties and we can truly speak of a circular supply chain that starts from the work in the fields to the transformation of the fruits into extra virgin olive oil. .

Today, those four saccades have become 30 hectares, but after 175 years Il Montaleo is still the Eden of Casale.
PRODUCTION
HOW QUALITY IS BORN
From the harvest to the finished product, the entire production cycle takes place within the company without the interference of third parties.
A real circular supply chain that begins with work in the fields and ends with the transformation of the fruit into extra virgin olive oil.
THE OLIVES
The olive trees on the farm are about 6,000, exposed to the sun, from sunrise to sunset, in the best Tuscan land: a soil composed of red clays and sands with marine sediments of the Pliocene at an altitude of about 200 m above sea level.
The cultivars present are the classic Tuscan: Moraiolo, Frantoio, Leccino, Maurino, Leccio del Corno, Pendolino, Lazzero.
To these is added a cultivar originally from Sicily, the Tonda Iblea.
Our monocultivars
In order to obtain a complete knowledge of the product and of each cultivar, we are committed to the production of different mono varietal oils: Monocultivar di Lazzero, Monocultivar di Leccio del Corno, Monocultivar di Maurino, Monocultivar di Frantoio and Monocultivar di Tonda Iblea.
Each cultivar has its right point of ripeness and it is precisely at that moment that the olive harvest takes place.
COLLECTION
The olive harvest takes place mechanically with avant-garde means among which the latest generation shaking machine stands out, which allows a harvest without trauma for both the olives and the plants.
The olives are separated from the leaves with a latest generation plant and are carefully selected to eliminate any impure elements.
CRUSHING
The harvested olives are pressed within 6 hours to prevent the chemical and organoleptic properties of the oil from changing.
The staff of Podere Il Montaleo carefully follows the entire pressing phase, constantly checking the temperature and quality of the process.
FILTERING
The oil is filtered immediately after pressing to prevent impurities from appearing such as to alter the flavors, aromas and speed up aging.
BOTTLING AND PACKAGING
After filtering, the product is packaged using the brand new bottling line.
The packages we offer are both in steel cans and in glass bottles.
The latter, which have always been equipped with anti-topping caps, are designed and manufactured to favor product quality maintenance and limit the effects of any temperature change or accidental greater exposure to sunlight.
