OLIVE OIL HISTORY

Majestic in its beauty, mighty against the hardships of nature, the olive tree has its roots deeply implanted in history, with origins dating back to our ancestor that lived in Jordan thousands of years ago.

Civilization after civilization have considered this tree sanctified, they have eaten its fruits as a delicacy, and used its leaves and oil. It was first cultivated in Jordan and Syria around 6000 BC and then moved westwards to reach the new world in which it was introduced by the Spanish settlers in the year 1500AD. According to the Old Testament, it was an olive branch that the dove brought back to Noah which let him know that the land was safe once again. A garland of olive leaves, a symbol of honor was found in the tomb of Tutankhamen. Pickled olives were found stored in the ruins of Pompeii..

The Greeks consecrated the tree to Minerva (goddess of wisdom and health). They also considered it together with its oil a symbol of abundance and courage and crowned the victorious athletes in their Olympic games with its leaves. In fact the olive tree was so important that has been mentioned several times in the Iliad, the Odyssey and the Bible.

Throughout the Mediterranean basin, olive oil has been used for thousands of years as a source of youth, beauty and health.

It was blended with herbs and essences to prepare ointments for different therapeutic and cosmetic uses. It was also used for religious purposes. In pre-biblical religions it was consecrated and offered to the gods. Israelites, since the time of Moses, burn it in the lamps of the synagogues and use it to prepare ointments. Orthodox-Christians use it in the holy unction used in ceremonies such as baptism.

Today, Jordan is one of the main producers of olive oil, this latter production is of very high quality due to the ideal growing conditions of the trees (solitude, rocky fields, dry hot summers, and rainy winters) and to the method used to extract the oil. This method has been passed on from father to son in families that have made olives and olive oil their business and way of living.

Our motto in life is to be honest in all of our interactions; it is our primary concern that we produce excellent virgin olive oil.

We produce our olive oil by using the best technology available (rapanelli) and strictly controlling for the ideal extraction conditions to ensure quality of the end product. Another factor which contributes to the quality of the oil is that, the olives are processed on the same day that they are collected from the fields.

Many years of accumulated knowledge have also qualified us to recognize and choose the finest quality of the oils offered by other producers in the region. These are the oils to which we give our name and offer to our customers with confidence and pride.

Our passion for olives is a family tradition. It is part of our identity and our heritage. Its religious symbolism and health benefits have created in us love of olive oil.

We enjoy sharing with others the benefits of something so essential to life. We have two decades experience in the olive oil business; it is a part of our being and our history.

THE MILL

In Jordan this small beautiful country, we have planted, loved, and cared for olive trees for many generations. We have set out to establish a plant that combines the long Jordanian history and tradition of olive oil making, we have learned by experience, how to choose the best olives and how to extract their oil.

First, the olives are handpicked and transported in plastic boxes to the mill site. The olives are then placed in the hopper, then up to the washing machine of the production line. The clean olives are passed up to the crusher to be crushed then down into the mallixers after the proper time under controlled conditions the paste is pumped into decanters where oil is separated from the water & solids, then out to collecting tank then to the vertical separator which is the final stage of the process.

There's oil and excellent oil.
There's olive oil and extra virgin olive oil. Extra virgin olive oil is rich in nutrition as a result of strictly controlling multiple factors from hand picking and during the extraction process.

A nice drive through Wadi Mujib "Arnoon", passing the kings highway and you'll come to Al-Waseyeh, near Rabbah.
You can talk to one of the owners who will guide you round the machinery explaining all the secrets for making real extra virgin olive oil. You'll be able to try our marvelous extra virgin olive oil on a "brochette" (piece of bread) heated in the fire.

To get excellent extra virgin oil, the olives need to be controlled from the field through transportation to the processing. Only the oil with special characteristics can be called extra virgin olive oil.

Olive benefits
Today as in the past olives and olive oil have an important place in the lives and diets of the inhabitants of the Mediterranean basin.
They eat the fruits ripe or pickled, accompanied by bread or as part of their many healthy recipes. They use the oil as the main fat for cooking and for salad dressing in their cuisine, which is claimed to be the most health-friendly around the world.

Olive oil is also being introduced in the diets by more and more people, after it has been proven beneficial to the health in general and to the heart in particular (as it helps to prevent-disease by lowering the level of cholesterol in the blood). The soaps and creams that are made from it are becoming very popular in the West, as they have always been in the East. They are the most moisturizing organic and healthy skincare products in the market.

Consumption of olive oil provides large amounts of mono-unsaturated fat (mufa) which have been shown to be cardio-protective as compared with the saturated fats (sfa) found in animal fats. Extensive studies have shown that the consumption of mufa influences the postprandial lipoprotein metabolism even in persons with a long history of sfa consumption.

Beneficial changes in blood clotting factors were also observed on the high mufa diet. The findings explain the lower risk of heart disease observed in Mediterranean populations and strengthens the evidence for the beneficial effects of diets high in mufa such as olive oil.

Hippocrates the father of medicine knew well the therapeutic properties of olive oil. In his surviving works there are more than 60 pharmaceutical and medical uses of olive oil for dermatological conditions to fever and stomach ulcers. Today science confirms all of these old uses and discovers new uses this miracle green gold.
